Traditional Indian recipes from the Chandraseniya Kayasthan Prabhu (CKP) of Maharashtra.
In the Marathi language of Maharashtra, India, Aai is the word for mother. Prepared by the mother-daughter team of Usha Gupte and Swati Gupte Bhise, this cookbook shares recipes from the cuisine of Maharashtra, and specifically the Chandraseniya Kayastha Prabhu (CKP) tradition in which they were nurtured.
The unique history of the CKP people and their vast and varied cuisine is reflected in the variety of offerings, from vegetable, sprouted bean and rice dishes to meat and fish preparations and, of course, a good selection of sweets. It provides an explanation of the spices used in the recipes as well as techniques for preparing tadke (tempering the spices) and for vaadni (or preparation of the serving plate).
Inside, the book features more than 70 recipes ranging from quick and easy preparations such as Palak (Spinach) and Besan Ladoo (Sweet snacks) to more complex recipes such as Chimbhori cha Kaalvan (Crab curry) or Khaja che Kanavle (Flaky layered pastry). It is a well-rounded introduction to CKP cuisine, featuring well-known pulaos and curries as well as CKP hallmarks such as Kadve Vaal (Bitter field bean curry) and Pithla (Basic comfort food). Many of the recipes feature ingredients and spices commonly used in Indian cuisine, as well as more exotic Maharashtran ingredients such as colocassia leaves, drumstick vegetable and Bombay duck.

Both of my parents were born in India, one of them in the Maharashtra. This is the style of Indian cooking we ate growing up and it is still my favorite. Most of the cooking books out there will cover the Northern Indian perspective, which is fine. Over the past few years, I have started to see more Southern Indian cook books show up on Amazon and in the book stores. The cuisine is quite different (better in my view). Lots of wonderful, healthy veggie dishes in Aai's Recipes. This cookbook is illustrated beautifully and provides the "real" recipes for the great Maharashtrian dishes, not the dumbed down Western equivalents. I highly recommend this book!Product details

This gem contains authentic recipes, gorgeous pictures, and informative chapters about the history and origins of he cuisine. Clearly written and easy to follow, this unique book will teach you how to make the rarest and most difficult dishes as well as the more common, easier preparations.
Aai's Recipes is a classic compilation of some much-loved recipes. Certain delicacies mentioned therein are not commonly prepared today due to the lost knowledge of traditional CKP recipes. Some items that were customary to make at home during the festive seasons, such as Khaja che kanavle, involve complex preparations, and so have not been carried down the generations. Aai's Recipes is well written with mouth-watering photos of the dishes and is easy to follow. This book is a valuable keepsake for self and others, as a ready reference and reminder of rich CKP history and the interwoven food culture.
Not one to normally write reviews, I have to say, this SUPERB book compelled me to write! To sum it up, it really does taste like 'Aai's Recipes' meaning 'Mom's recipes'.
I've now tried almost every recipe in the book (save one) and they absolutely take me back to my childhood days at Mom's. It's a great book to pass down to your kids.
The book is designed very well. It's not just a cookbook. It's a hostess' guide. It starts with the authors taking you on the historical & culinary journey of the CKPs into Maharashtra, how a full-course meal is traditionally laid out, and kitchen essentials complete with traditional keywords. (Makes you feel like a pro). The recipes themselves are laid out in a beautiful, lucid style with gorgeous photographs for each recipe, meaning you can't go wrong with how it's supposed to look in the end ) The pictures whet your appetite and you can almost smell the aroma of the gorgeous food!
Some of the recipes are so unique and atypical (Fenugreek Shrimp, Brain cutlet, and Kheema Kanavle) that after reading them here, I now remember my lovely Aunt making them for us back in the day when we used to visit India from abroad. Thanks to Mrs Gupte and her daughter for sharing the nearly lost epicurean art of the CKPs. This book is not just for CKPs but for anyone and everyone who enjoys (mainly) konkan inspired cusine, especially seafood lovers. You will not regret!
One minor note - The Sol Kadhi (kokum drink) is labelled in the book as dried mango drink. For those who want to make it - keep in mind, dried mango ('Amchoor') and dried kokum ('Amsule') are different. However, thanks to the Author's genius, I tried making both versions, and now I have two gorgeous different recipes! (If you attempt the mango version, make sure you use Amchoor and not Amchoor powder. You will love yourself!)
Not so impressed as a CKP ! Very few recipes & not up to the mark. Even the plain old "Varan" picture is so watery! Modaks are badly shaped. CKP food is on a different level. I don't think its really Aai's. Sorry Aai!!
Average cook book. I was hoping to see a lot more recipes, to get a hang of CKP cuisine. I thought this would be my to-go ckp food bible.....but I still find myself talking to my mom in law for more awesome ckp recipes....

On a flip side, I have to say, that the book is a bit pricey.
This is a beautiful book. In addition to the wonderful recipes, the author writes a narrative giving history and lots of information about the cuisine. I gave it as a gift to a friend, and she couldn't thank me enough!
